Air Fryer Chorizo & Chickpea Stew

I'm so excited to share with you another recipe from The Ultimate Air Fryer Cookbook: 15 MINUITE FEASTS! This is a hearty, warming stew. It’s a great store-cupboard dinner and will work just as well with other tinned pulses too. Serve with a side of rice or salad and crusty bread if you want to make more of a meal.

Turn cooking mode on

Step 1

Preheat your air fryer to 200°C for 4 minutes.

Step 2

Place your sausages, onions and fresh tomatoes in the air fryer basket and stir so they’re evenly mixed. Cook for 6 minutes.

8 Chorizo-style sausages

1 Onion

4 Tomatoes

Step 3

Add the passata, tinned tomatoes, chickpeas and remaining ingredients. Stir, then cook for 6 minutes.

690 ml Passata with herbs

1 tin Cherry tomatoes

1 tin Chickpeas

1 tsp Balsamic vinegar

1/2 tsp Brown sugar

1 tsp Smoked paprika

1 tsp Garlic granules

1 tsp Dried oregano

1/2 tsp Pepper

1/2 tsp Salt

Step 4

To serve, add a good drizzle of olive oil and sprinkle with feta, parsley and optional chilli flakes if you fancy some extra heat, and a dollop of yoghurt on the side.
