Air Fryer Mediterranean Salmon Parcels

These Mediterranean salmon parcels are such an easy, healthy dinner to throw together. Everything cooks in the same parcel, keeping the salmon really soft and full of flavour, while the veg turns perfectly tender underneath. It’s also a great recipe for mixing up the vegetables depending on what you’ve already got in the fridge, peppers, courgette, tomatoes, red onion, olives… it all works really well. Served with cous cous, fresh basil, and a scatter of pine nuts, it’s fresh, quick, and ideal when you want something that feels light but still really satisfying.

Turn cooking mode on

Step 1

Lay out two sheets of baking paper and divide the chopped red pepper, chopped courgette, and tomatoes between the parcels. Place a salmon fillet on top of each.

1 Courgette

1 handful Small tomato

2 Salmon fillet

Step 2

Spoon over 1 tsp of pesto per salmon fillet and season with a little salt and pepper.

2 tsp Green pesto

Step 3

Fold the baking paper over and scrunch the edges together to seal into parcels.

Step 4

Place the parcels into the air fryer basket and cook at 190°C for 15 minutes until the salmon is cooked through and the vegetables are soft.

Step 5

While the salmon cooks, prepare the cous cous according to packet instructions.

Cous cous

Step 6

Spoon the cous cous onto plates, open the salmon parcels carefully, and serve everything together.

Step 7

Finish with a scatter of pine nuts and fresh basil.
