Sweet potatoes and butternut are popular seasonal vegetables in the colder months, and combine perfectly to make this hearty soup. This soup would usually take an hour to make using a hob but it can now be ready in half that time thanks to the speedy air fryer. And the intense heat of the air fryer quickly caramelises the roasted vegetables giving this soup a delicious deep flavour.

This is a great recipe to use up left over from a Sunday roast!! Air fryer chicken croquettes are one of my all time favourite comfort food, I love their crispy exterior and creamy, flavourful filling. Traditionally deep fried, these scrummy bites have now been reimagined with a healthier twist. So thanks to the wonderful air fryer, using less oil, making them a lighter yet still satisfyingly crispy treat. I love my croquettes made with chicken, but you can use all kinds of different fillings, from cheese, chorizo, ham and bacon!

Enjoy this deliciously creamy air fryer tomato soup made with roasted tomatoes, garlic, shallots and herbs. This simple, healthy and comforting roasted vegetable soup is prepared and ready less than 20 minutes. You may not think about roasting your vegetables in an air fryer but it is so much quicker and cheaper than using the conventional oven. You only need a few simple fresh ingredients and some seasonings to enjoy this comforting dish with fresh bread or a cheese toastie.

Air Fryer Salmon Salad
This air fryer salmon salad is a perfect healthy air fried lunch. Salmon cooks so beautifully in the air fryer, keeping it moist and slightly pink too. This is a little twist to a classic salad that I have been cooking for many years, adding that Greek taste with the feta cheese just brings the dish together and the lemon cuts through the ingredients beautifully. It is worth keeping in mind that depending on the size of your fish fillet, you may need to adjust the cooking time accordingly. All air fryers cook so differently as well.
