The great thing about this air fryer spinach cannelloni is that if you don’t have time to make the cannelloni from scratch, lots of supermarkets sell them fresh and ready rolled. Adding the pesto to the cheese and spinach just gives it that little extra flavour too.

Air Fryer Sausage & Red Pepper Bake
This air fryer sausage bake is a wonderfully warming dish that’s perfect for chilly autumn days or cold winter nights. The whole family will love it and will be looking for a second helping. This hearty dinner is a great recipe to get extra veggies on to your kids’ plate. The peppers, onions and tomatoes cook down into a lovely rich, thick gravy-like sauce. Which everyone adores. I just love to serve this dish with big chunks of fresh crusty bread. Ideal for mopping up all the lovely tomatoey sauce. But you could also serve it with mashed potatoes if you prefer. To make a veggie or vegan friendly version of this delicious dish, simply substitute the pork sausages for a plant based alternative. And leave out the Worcestershire sauce. This recipe is incredibly versatile and can be tailored to suit different dietary preferences and what you have available in your kitchen. It’s a great way to clear out your vegetable drawer and ensure nothing goes to waste. It’s also the perfect option for busy weeknights. When you want something nutritious and satisfying without spending hours in the kitchen.

I just love the colour of sweet potatoes no matter how they are cooked, they are just so vibrant. I use frozen sweet potatoes for this curry, but you can of course use fresh ones if you prefer. The same goes for the spinach, if you don’t have fresh then pop in some nuggets of frozen spinach and add a little more cooking time.

Air Fryer Shiitake Mushrooms
I made this delicious twist on an Asian style dish that I have been cooking for years. But I swapped my usual beef mince for Shiitake mushrooms, and it was delicious. Shiitake mushrooms are so rich in flavour, firm with a super meaty texture. I first started making this dish when we as a family decided we wanted to have more meat free days, and the Shiitake mushrooms did not disappoint, they seem to take this dish to another level! The mushrooms soak up all the flavour of the sauce and they have this wonderful sticky consistency.
