Air Fryer Sausage & Red Pepper Bake

This air fryer sausage bake is a wonderfully warming dish that’s perfect for chilly autumn days or cold winter nights. The whole family will love it and will be looking for a second helping. This hearty dinner is a great recipe to get extra veggies on to your kids’ plate. The peppers, onions and tomatoes cook down into a lovely rich, thick gravy-like sauce. Which everyone adores. I just love to serve this dish with big chunks of fresh crusty bread. Ideal for mopping up all the lovely tomatoey sauce. But you could also serve it with mashed potatoes if you prefer. To make a veggie or vegan friendly version of this delicious dish, simply substitute the pork sausages for a plant based alternative. And leave out the Worcestershire sauce. This recipe is incredibly versatile and can be tailored to suit different dietary preferences and what you have available in your kitchen. It’s a great way to clear out your vegetable drawer and ensure nothing goes to waste. It’s also the perfect option for busy weeknights. Turn cooking mode on

Step 1

Start by placing your sausages into a large dish and drizzling them with the vegetable oil. Cook in the air fryer at 190°C for about 10 minutes or so.

Step 2

While the sausages are cooking in the air fryer, slice your onion and pepper and peel and finely chop your garlic.

Step 3

After around ten minutes, give the sausages a good shake to ensure they are cooking evenly and add the onion, pepper, garlic, and tinned tomatoes to the air fryer.

Step 4

Finish with a good shake of Worcestershire sauce and season to taste with a good pinch of salt and grind of pepper.

Step 5

Return the dish to the air fryer drawer and cook for a further 10 to 15 minutes, until the sausages are cooked through and you have a nice thick sauce.

Step 6

Carefully remove the dish from the fryer and serve your air fryer sausage bake with some crusty bread to soak up the delicious tomato gravy!
