I just love the colour of sweet potatoes no matter how they are cooked, they are just so vibrant. I use frozen sweet potatoes for this curry, but you can of course use fresh ones if you prefer. The same goes for the spinach, if you don’t have fresh then pop in some nuggets of frozen spinach and add a little more cooking time.

I do love a Sunday roast, and cooking one in the air fryer couldn’t be easier. The crackling on this pork is unreal and the meat is so juicy. When cooking a joint of meat, I like to use a meat thermometer. This little device makes cooking even easier, as you don’t overcook or, most importantly, undercook!

2 Onions, thickly sliced

3 Peppers (in a mixture of colours), deseeded and cut into 3–4cm chunks

4 small Pak choi, halved

1 kg Frozen sweet potato chunks

1 Brown onion, peeled and thinly sliced

300 g Fresh spinach

1 Red chilli, deseeded and finely sliced

3 Large carrots, peeled and thickly sliced on the diagonal

3 Fresh beetroots, peeled and each chopped into 8–10 wedges

1 Small cauliflower, cut into florets (about 350g prepared weight)

1 Red onion, sliced into wedges

60 g Pomegranate seeds

1 Small garlic clove, crushed

600 g White potatoes

150 g Kale, chopped
