Air Fryer Roast Lamb & Potatoes

Turn cooking mode on

Step 1

Remove the lamb from the fridge at least thirty minutes before cooking and pat dry with paper towels.

1.25 kg Half leg of lamb

Step 2

Make a marinade using 2 tbs olive oil, a tsp dried rosemary, a tsp garlic paste, Salt & Pepper.

2 tbsp Olive oil

1 tsp Dried rosemary

1 tsp Garlic paste

Salt

Pepper

Step 3

Place your lamb joint on to a large sheet of tin foil and brush on the marinade.

Step 4

Wrap the lamb with the tin foil and place into the air fryer directly or in an oven proof dish.

Step 5

Cook at 200C for 30 mins turning the joint over half way through.

Step 6

Meanwhile, peel your potatoes and chop into roughly 4cm chunks. Place in a bowl, drizzle with olive oil and season with salt and pepper, then toss, making sure all of the potatoes get a good coating of oil.

Step 7

After the lamb has had 30 minutes, remove the foil, turn your lamb again, and arrange the potatoes around it. Set the temperature to 190c and cook for a further 20-25 minutes, turning the potatoes half way through.

Step 8

Serve with your favourite vegetable sides, mint sauce and gravy!
