Turn cooking mode on

Step 1

Grate half a sweet potato into a mixing bowl. Then grate two medium carrots into the bowl.

Step 2

Finely chop two fresh chillies. Add two tablespoons of cottage cheese for a creamy texture, followed by a cup of self-raising flour to help the muffins rise nicely. Crack in three eggs, then stir in a generous handful of grated Parmesan cheese.

Step 3

Mix in a tablespoon of pine nuts and a handful of breadcrumbs, and two teaspoons of cumin seeds. Finally, season with salt and pepper to taste.

Step 4

Give it all a really good mix then spoon about a tablespoon of the mixture into each silicone muffin mould.

Step 5

Cook them in batches of three at a time in the air fryer at 160°C for around 25 minutes. Check halfway through to make sure they are cooking evenly. The muffins are done when the tops are golden and firm to the touch.
