I made this delicious slow cooker pepper soup last week when I had a friend over for lunch. So who doesn’t love the slow cooker for things like this. So I just pop the ingredients in the morning and by lunch time it’s all ready to serve! I had a packet of tortellini that needed using up too and it was just perfect in this healthy pepper soup. So adding the pasta just gave the soup that little twist and made it more of a hearty, filling lunch.
