Soup has got to be one of the easiest, and yet overlooked dishes, that you can create in the slow cooker. Combine its ease and simplicity with using up your leftovers and you have the perfect combination. Soups can be extremely versatile and can act as a great appetiser. Or be the star of the show, especially when paired with some delicious fresh crusty bread rolls. This slow cooker vegetable soup is a great recipe to use up the left over veggies from your Sunday roast, or just the odds and ends you have at the back of the fridge. The beauty is that anything goes, just throw it all in the slow cooker with some vegetable stock and let the slow cooker work it’s magic! I’ve listed the ingredients I used, but really most vegetables will work with this recipe.
