Air Fryer Mince Pie Lattice Slice

My twist on the classic Christmas mince pie! Make this lattice slice to fit your air fryer basket or into whatever shape takes your fancy, no cutters needed! Luxurious mincemeat, sweet shortcrust pastry and a magical dusting of icing sugar. Your kitchen will be full of the aromas of Christmas in no time. Turn cooking mode on

Step 1

Preheat your air fryer to 200°C for 5 minutes while you make the lattice.

Step 2

Lightly flour your worktop and unroll your shortcrust pastry. Cut it lengthways into 4 equal pieces, 2 for the base and 2 for the lattice.

Step 3

Cut both lattice pieces lengthways into 8 equal ribbons. Cover with cling film or a tea towel so it doesn’t dry out.

Step 4

Cut two pieces of baking paper that will fit into the air fryer and place your pastry bases on these.

Step 5

Spread the mincemeat onto the pastry bases, leaving a 1cm edge.

Step 6

Lay 8 ribbons diagonally over each base, pressing them gently into the edges. Trim the excess and use these to cross over the opposite way, creating a lattice effect. Press the edges down gently and neatly trim.

Step 7

Brush the pastry all over with the beaten egg and carefully lift the slices into the air fryer basket. Cook at 170°C for 15 minutes until crisp and golden. Leave to cool slightly before lifting out.

Step 8

Sprinkle with icing sugar and serve warm with a cup of tea or a Chrimbo sherry!
