Air Fryer Tuna Croquettes

Golden and crispy on the outside with a soft, flavour-packed centre, these Air Fried Tuna Croquettes are a brilliant way to use up leftover mashed potato. Packed with tuna, parsley, tartare sauce, and lemon, they’re light, comforting, and perfect served with salad, dips, or extra lemon wedges. The air fryer gives them a delicious crispy coating without deep frying, making them ideal for an easy lunch, light dinner, or starter. Using cold leftover mash helps the croquettes hold their shape better, and chilling them for a few minutes before cooking can make them even easier to handle. For the crispiest finish, lightly spray with oil before air frying and make sure they’re evenly coated in breadcrumbs. Serve straight away while hot and crispy with extra lemon squeezed over the top for a fresh zingy finish.
