Turn cooking mode on

Step 1

Grate the sweet potato, onion, and carrot, and thinly slice the cabbage. Put all the vegetables into a large mixing bowl and add finely chopped cloves of garlic, one diced red chilli, a teaspoon of black mustard seeds, and a generous spoonful of curry powder. Give it all a thorough mix and leave the mixture to rest for a while.

Step 2

Roll out a sheet of filo pastry and slice it in half lengthwise. Place a tablespoon of the veggie mixture in the bottom left corner of each strip. Brush the edges with a little water, then fold from the corner, carefully creating a triangle shape with each fold. Fold tightly so the filling is well-contained and the samosas hold their shape.

Step 3

Give a light spray with oil before placing them in the air fryer at 180°C for 12 to 15 minutes. Check them regularly to prevent overcooking.

Step 4

Serve with a cooling homemade raita and a dollop of sweet chilli jam.
